there's another one along Division as well. Very quit and easy going type of place. So if you do like the place keep it on the down low. If not sure on the menu ask the COOK meaning ask for the cook.lol On which is the best for a non gluten menu item.My favorite is Chicken Biryani, lamb biryani, rice biryani, shrimp biryani. Yummy, just be careful of the added ingredients. Cardamom spice if you've never had this question it. Sometimes the ingredients depends on how the cook usually cooks the biryani. Your most likely not going have cooked the same way every time.Biryani was for people of power and high class in India's past.

Ask for Chef Troy....if he is not available tell the host/hostess you will be ordering Gluten Free and please tell the chef to be expecting a Gluten Free order. Also tell your food server and ask for suggestions. Double check EVERYTHING that is brought to your table!!!! Is this gluten free? They always seem to bring soy sauce or some concoction that is not GF even though the entire table is ordering Gluten Free. When your food arrives ask again is this gluten free? It will make them aware of how important it is they don't make a mistake. I do this repetitive questioning everywhere.... you wouldn't believe how many times they had to correct it.

I went to Bambino's yesterday (located at 726 N 4th in Cd'A). It was wonderful! They can do all their pizzas and pastas with gluten free pizza crust or pasta. Of course double check the ingredients in the pizza toppings and pasta sauces, but I had no problems! The staff and chef were all very accommodating with my questions and requests and the chef even reheated a gluten free soup for me, since the soup of the day was not gluten free. And everything tasted great! They even make gelato and state its gluten free too! I highly recommend Bambinos, but as always, ask plenty of questions to your own satisfaction. Enjoy!

In CDA I have safely dined at Bonsai Bistro, Syringa, Azteca, Bambino's, Angelo's, and Le Piastre. Angelo of Angelo's will cook anything from the menu for you modified. Bambino's was fabulous. Azteca has a limited menu, but as long as you go at off-peak times, they'll make special meals for you. Le Piastre doesn't have much that is safe, but what they do have is excellent.

There is a new Pizza place opening soon on 4th that advertises Gluten Free Pizza! More on that as we check them out. If anyone knows Angelo's on 4th they are the ones opening the pizza place. I think it is called Bambino's or something like that. If you are a "regular" anywhere they will want to take extra good care of you to keep your business now that you have gone Gluten Free. So if you find a good place that takes good care of you PLEASE pass it on to us we would like to give them more GF business!

New products found in the Coeur d'ALene area

Made some stops at the markets yesterday and noticed lots of new products. Super 1 on Kathleen now has GlutenFreeda's "Instant Oatmeal" all flavors. If you haven't tried this yet it is really good. Not too sweet and wholesome ingredients. And Gluten Freeda's frozen burrito's. Sandra has gotten in so many new products they are not all in the GF isle so take a walk around the department and look for her GF signs.

Super 1 in Hayden now carries a fair selection of GF foods in their new nutrition area!

Pilgrims also has Gluten Freeda's "Instant Oatmeal". In the freezer area you will find some yummy Gluten Freeda's Ice cream sandwiches! As I was munching on one reading the box I noticed the manufacturing warning of cross contamination....bummer. John and Bryan got to finish the package of 4 :(

Xanthan Gum...how much to use

Authentic Foods Recommended Uses for Xanthan Gum:
• Cake- ¼ teaspoon per 1 cup flour
• Bread- 1 teaspoon per 1 cup flour
• Pizza Crust- 2 teaspoons per 1 cup flour

Know your flours & what they do

Step One
Use potato starch flour, which is ideal to thicken cream-based soups and sauces; decrease the amount called for in typical recipes by one half. In a small glass jar with a tight fitting lid, combine ice water and potato starch flour in a 1 to 1 ratio; shake jar vigorously until mixture is smooth and proceed with recipe. Cornstarch is a refined starch from corn that is used as a clear thickening agent for puddings, fruit sauces and Asian cooking. Prepared with the same 1 to 1 ratio, cornstarch usually does not need adjustment.

Step Two
Work with tapioca flour, which is a light, white, very smooth flour that comes from the cassava root Manihot esculenta. This imparts baked goods with a nice chewy taste that makes it superb for use in white or French-style bread. Soy flour has a high protein and fat content with a nutty taste. It is best when used in combination with other flours and for baked goods that include chocolate, fruit or nuts, such as brownies and banana bread.

Step Three
Substitute corn flour for wheat flour in recipes that call for a mixture with cornmeal to make cornbread or muffins; corn flour also makes excellent waffles or pancakes especially when topped with blueberries. For every 1 cup of corn flour, add ½-tspn of xanthum gum or guar gum to improve the texture. Cornmeal is simply ground corn that comes from either the yellow or the white varieties.

Step Four
Utilize fine textured white rice flour. This is unequaled as basic flour for gluten-free baking. It performs well with other flours and is flavorless. Milled from unpolished brown rice, which has more food value because it contains bran, brown rice flour is best in recipes for baked goods that call for whole-wheat flours.

Making your own mixes and Flour Combinatons

Your best friend for this would be the Bobs Red Mill site. The recipe page is so easy to use. Select gluten free as the category and see all the options. Try using the keyword option by putting in Bette Hagman or Carol Fenster and see all the recipes they have submitted.
Suggestion: When you find that perfect recipe use ziplock bags and prepare the dried ingredients in advance. As long as you have all the ingredients out you may as well make 6, be sure to label them. This gets all the pre-measuring done and you have a home made mix all set to go!http://www.bobsredmill.com/recipe/

When subbing wheat flour in old favorite recipes, try using your favorite self rising baking mix. Gluten-free flours can always use a little boost in leavening. And the beauty of using gluten-free baking mixes in recipes is this: the right amount of xanthan gum [needed for binding and texture] is already in the mix.
For those of you interested in mixing your own gluten-free flour mix from scratch, here is a basic guideline, with options:

Self-Rising Flour MixCombine:
1 cup gluten-free flour mix·
1 1/2 teaspoons baking powder·
1/2 teaspoon salt

Basic Gluten-Free Flour Mix

Combine:
2 cups rice flour* [or 1 cup rice and 1 cup sorghum flour]
2/3 cup cornstarch [or potato starch]
1/3 cup tapioca starch [*or almond meal or buckwheat or quinoa flour for more protein]
1 teaspoon xanthan gum [or guar gum]

Notes:Brown rice flour is a whole grain and has more nutrition. It works well in recipes if balanced with lighter flours.
You could try: 1 cup brown rice flour and 1 cup white rice flour.

Subbing denser flours such as almond, buckwheat, coconut or quinoa will result in a heavier, denser product. Start with a third of a cup. Experiment and find the formula and texture you like best. Remember don’t throw away your failures. You can always freeze them or put them in the food processor and use the crumbs, croutons, etc.

BETTE HAGMAN’S GLUTEN FREE FLOUR BLENDS:

Dream pastry flour” is from Bette Hagman’s
It is meant for use in pie crusts:
2 cups tapioca starch
2 cups cornstarch1 cup potato starch (not potato flour)
4 cups mochiko (sweet rice flour)
4 teaspoons xantham gum
2 teaspoons sugar
2 teaspoons salt

Mix these ingredients really thoroughly, either in a large bowl, bag or jar, and store in an airtight container.

Bette Hagman's Gourmet Blend

Two part white rice flour
Two thirds part potato starch flour
One third part tapioca rice flour

Parts can be any unit of measure, cups, pounds, gallons, etc.

Bread flour mix:

1 part white rice flour
1 part brown rice flour
2/3 part potato starch flour
1/3 part tapioca flour

Bean flour mix:

1 part light or dark bean flour
1 part cornstarch
1 part tapioca flour

Gluten free flour

1 cup finely ground raw almonds
1 cup white rice flour
1 cup tapioca flour
1 cup potato starch
1/3 cup buttermilk powder
1 tablespoon xanthan gum
1/2 teaspoon salt

Russ Paden's All Purpose GF Flour Mix

I use the GF flour mix posted by a lister a short while back. I have found it to work great in everything I've tried so far!

4 cups brown rice flour
1 1/2 cups sweet rice flour (NOT white rice flour)
1 cup tapioca starch or tapioca starch flour 1 cup rice polish (or rice bran, but it's not as good)
1 tbsp xanthan gum or guar gum

Make large batches and store in freezer. This compares to all purpose wheat flour; substitute it 1 cup to 1 cup.

GLUTEN FREE FLOUR COMBINATIONS

Suggestions from Carrie:

1.)Brown Rice Flour – 2 ½ cups
White Rice Flour – 2 cups
Corn Starch – ½ cup
Potato Starch – ¾ cup + 2 TablespoonsTapioca Starch/Flour – ¾ cup + 2 TablespoonsXanthan gum – 3 Tablespoons

2.) Brown Rice Flour – 1 cup
White Rice Flour – 1 ¼ cup
Potato Starch – ¼ cupTapioca Starch/Flour – 2/3 cupSweet Rice Flour – ¾ cup
Arrowroot Starch – 1/3 cup
Xanthan gum – 2 teaspoons

3.) Brown Rice Flour – 1 cup
Garbanzo bean/Chickpea flour – 2/3 cup
Tapioca Starch/Flour – 1/3 cup
4.) Brown Rice Flour – 2 cups
Tapioca Starch/Flour – 1 cup
Bean Flour or Sorghum Flour – ½ cup

Baking Egg Free tips

Tips for baking Egg Free
• Ener-G Egg Replacer (binding or leavening) 1 Tbsp. Egg
Replacer, 2 Tbsp. lwarm water
• Pumpkin, Applesauce, Mashed Banana or other high pectin
fruit puree. (binding, cookies and cakes, pancakes) 1/4 cup = 1
egg Add 1/2 tsp. baking powder to the recipe.
• Knox Gelatin (binding, breads)
- 1 packet gelatin, 2 Tbsp hot water
Don’t mix until ready to use.
• Flaxseed (leavening, breads, cookies, muffins, cakes)
- 1 Tbsp. ground flaxseed , 4 Tbsp. warm water
Simmer in saucepan for 5 minutes or until thick
egg like consistency. Cool completely, makes
one egg. Make a larger batch and store in
fridge for up to 2 weeks. 1/4 cup = 1 egg
* Most recipes call for 3 Tbsp. warm
Water, I think 4 Tbsp. warm water works best.
• Tofu (binding)
1/4 cup = 1 egg Whip or Beat
• Baking Powder (leavening)
2 tsp. Baking powder, 2 Tbsp water,
1 tsp. oil, mix well
- 1 tsp. baking powder, 1 Tbsp. water,
1 Tbsp. vinegar
• Yeast (leavening)
1 tsp. yeast dissolved in 1/4 cup warm water

Creston BC Deli...good to know about

I would like to share with you a very nice culinary discovery that I just made on my very short visit to Creston, BC a few days ago. I accidentally ran into a German deli in Creston where the owners: Victoria and Tomas make from scratch German sausages, hams, etc. that are free of gluten, MSG and preservatives. According to Tomas this is how all deli meats are made in Germany and apparently over there it is illegal to add gluten to sausages and other processed meats. Both, Victoria and Tomas are extremely enthusiastic about their business and love making new friends. They event didn't mind to re-open the deli when I caught them in front of their store after they just shut it down. So I was wandering if you could spread the word among our Celiac community about the great deli that is located not too far from Spokane and CdA.Here is the info:
