Dr. Peter Green of the Celiac Disease Center at Columbia University in New York City says there are eight red flag symptoms that indicate someone might have the autoimmune disease, which is not always easy to diagnose. He says signs can vary but include diarrhea, fatigue, bloating, tingling, headaches, mouth sores, a rash and short stature.

As you may already know, the Food and Drug Administration recently published its gluten-free labeling proposal, opening a consumer comments period through October 3, 2011.

Many individuals want to comment on the proposal but may not be sure of what to write or how to frame their comments or perhaps find it complicated to navigate through the process. In an effort to help those who have requested some guidance, the American Celiac Disease Alliance(ACDA) in collaboration with many within the Celiac community, including Celiac Disease Foundation, has developed very useful resources for your information as follows: 1) a list of Frequently Asked Questions(FAQs); b) a letter focusing on several key points for which FDA is seeking comments; c) expert analysis of the safety assessment accompanying the FDA proposal by Dr. Stefano Guandalini, Medical Director of the Celiac Disease Center at the University of Chicago as well as a member of both CDF's Medical Advisory Board and ACDA.

You are invited to sign on to the letter. All responses and "signatory" names will be sent by ACDA to the FDA by the deadline of October 3rd. Below are the links for the ACDA materials (posted on its "sister" site 1in133.org). Please go to the links and take action about the vital issue of the gluten-free labeling ruling.

I wanted to let everyone know the CdA Resort is offering new GF desserts! A good friend of mine is a pastry chef there, and we've developed some new GF desserts for them. Currently a delicious GF Peanut Butter Tart is now available at the Dockside restaurant. A GF Gooey and a GF Huckleberry Cobbler as well as a GF Tiramisu are in the works. PLEASE go and order a tart so the Head Chef knows what a huge GF market there is out there and will continue to support more GF desserts! Enjoy!

Mighty Tasty Hot Cereal Muffins (yes it is made with the hot cereal)

Ingredients:
1 1/4 cups gluten free flour blend (I use Bob’s Red mill gf baking flour)
3/4 cup Bob’s Red Mill gf mighty tasty hot cereal blend

1/2 cup sugar

½ teaspoon xanthan gum

3/4 cup milk (I use powdered milk or soy milk)
1/4 cup vegetable oil
1 egg
1 tablespoon baking powder
1/2 tablespoon salt
1 teaspoon vanilla (optional but well worth it)

Preheat oven to 400 degrees. In a large mixing bowl, combine all the dry ingredients then pour in the wet ingredients. Stir together until all ingredients are moistened, Pour batter into a Demarle straight muffin mold filling cups 3/4 full. Bake 18-20 minutes or until center is firm to the touch. Yield: 12 muffins.

Mighty tasty hot cereal muffins…great by themselves or with some jam or honey.

Dear participant: We would like to invite you to participate in a Celiac Disease research study that
will include completing two questionnaires. The purpose of this is to understand what it feels like to live with celiac disease. The overall goal is to use your responses to test a questionnaire designed specifically for children with Celiac Disease. We would greatly appreciate your participation.
You do not have to participate in order to receive care. There is no harm to completing the questionnaires. The benefit of participating is that you will assist in the testing of a questionnaire which may improve the quality of life of children with Celiac Disease. You do not have to complete the questionnaires because participation is completely voluntary. Your name will not be included in the questionnaires.

Creston BC Deli...good to know about

I would like to share with you a very nice culinary discovery that I just made on my very short visit to Creston, BC a few days ago. I accidentally ran into a German deli in Creston where the owners: Victoria and Tomas make from scratch German sausages, hams, etc. that are free of gluten, MSG and preservatives. According to Tomas this is how all deli meats are made in Germany and apparently over there it is illegal to add gluten to sausages and other processed meats. Both, Victoria and Tomas are extremely enthusiastic about their business and love making new friends. They event didn't mind to re-open the deli when I caught them in front of their store after they just shut it down. So I was wandering if you could spread the word among our Celiac community about the great deli that is located not too far from Spokane and CdA.Here is the info:
